Salmon burgers
These are really easy to make and very delicious.
Ingredients:
200 g fresh salmon
1 red chili
1 yellow onion
Juice of ½ lime
A handful of fresh dill
2 slices of white bread
1 egg
1 tablespoon of whip cream
Salt and Pepper
Instructions:
Finely chop the onion, chili and dill and put it in a bowl. Break the bread into big crumbs and put that, along with the egg, whip cream and salt and pepper and juice of the lime, into the bowl as well. If the salmon has any skin or bones, remove that. Chop the salmon into 4 – 5 centimeter big cubes and the put them in a blender for about 15 – 20 seconds. Put the salmon the bowl with the other ingredients. Stir thoroughly. Put the bowl in the fridge for 30 minutes. Fry big tablespoons of the salmon-mix in a pan for approximately 2 – 3 minutes on each side.
Serve with parsley mashed potatoes and lingonberry jam to make it as Swedish as possible (;
I made this for lunch today. Pasta with a sauce made of whip cream and delicious things :3
Ingredients:
- pasta
- 2 big handfuls of fresh spinach leaves
- 1 garlic clove
- 1 dl whip cream
- 100 gr feta cheese
- juice of half a lemon
- a smalll handful of kalamata olives
- salt
- a few cherry tomatoes
Instructions:
Boil the pasta and then pour away the water but keep the pasta in the pot. Pour in the whip cream over the pasta. Add lemon juice and salt. Grade the garlic clove and put it in the pot as well. Let it come to a boil and then put in the spinach leaves. Cut the cherry tomatoes into halves and break the feta cheese into smaller pieces and put it in the pot. Let it simmer for a couple of minutes. Put the olives in the pot.

CHILI CHOCOLATE TRUFFLES
Ingredients:
- 100 grams of Lindt chocolate (70 %)
- 100 grams of milk chocolate
- 2 decilitres of whip cream
- 1 decilitres of sugar
- 1 red chili
- lemon zest from 1/2 lemon
- cacao powder
Instruction:
1. Roughly break down the chocolate into smaller pieces.
2. Pour the whip cream and the sugar into a pot. Let it simmer.
3. Cut the chili into 1-2 cm sized pieces and put them into the whip cream along with the lemon zest. Let it simmer for 3 - 4 minutes.
4. Take out the chili and put the chocolate into the cream instead. Let it simmer and stir continuously until the chocolate has melted completely.
5. Pour the chocolate into a bowl and let it cool down for an hour. Put the bowl in the fridge and let it set over night.
6. Take a tablespoon of the chocolate cream and roll it into a ball with your hands. Roll in cacao powder. Put on a plate. Put the plate of truffles in the fridge and take them out when it’s time to eat them.

PANNA COTTA
I made this panna cotta a few days ago. It’s terribly delicious and very easy to make!
Ingredients:
3 dl whip cream
0,5 dl sugar
0,5 vanilla pod
2 gelatin leaves
0,5 teaspoon cardamom
Put the gelatin leaves in a bowl of cold water for 5-6 minutes. Pour the cream, along with the sugar and seeds from the vanilla pod and cardamom, into a pot. Let it come to a boil. Take the pot away from the stove. Squeeze out all the water from the gelatin leaves and put them in the pot. Stir carefully for a couple of minutes until the gelatin leaves have melted. Pour into small glasses and put them in the fridge for at least 2 hours.
It tastes the best if you eat it with fesh strawberries.. just sayin.
